After settling, the juices are put into oak casks — or cylindrical tanks, for the ‘en crèches’ wine — for the alcoholic and malolactic fermentations.

Then the wines will be matured for a minimum of 10 months over fine lees, stirred about once a week to put the lees back into suspension and lend body and finesse.
