Cultivation & Vinification

Cultivating the vines

All the work in the vineyard is carried out with respect for the vines and the soil – most often by hand

We prune to a stem with 8–10 ‘eyes’, trimming and nipping superfluous buds to leave a reasonable number of grapes, tying and topcutting by hand, and stripping leaves off the runners to give the grapes more room and encourage better ripening.

All our ground is tilled. Sparing use of the tractor avoids compacting. Natural compost is applied regularly.

For many years now, we’ve been using environmentally-responsible treatments, including using sulphur, and no insecticides are used.
